Aubergine and ham wrapped feta

I had some ingredients leftover from the tomatoes and feta, and the moussaka so have just concocted a great salad recipe which I thought I’d share. It would be great for a weekend lunch.

  • Take the long strips of grilled aubergines (if you are grilling fresh, cut the aubergine into strips lengthways, brush with oil and griddle over a high heat. You could also bake them, I just prefer grilled)
  • Line the aubergine with some ham, preferable smoked
  • Then add a piece of feta to one end, and if desired a piece or slice of tomato
  • Roll them up, with the feta at the centre, and secure with a cocktail stick.
  • Bake in a medium oven for about 45mins
  • Serve with salad
