Home Made Chicken Noodle Soup

Chicken Noodle Soup is one of the most comforting dishes. And it’s great after a long day at work when you can’t be bothered to spend ages cooking. This recipe is made following roasting a chicken and using the leftovers.

  • Put the bones into a big pan and cover with water. Add one peeled carrot, and onion and any other fresh veg that you have to hand. Season. Bring to the boil and then simmer for a couple of hours.
  • Leave to cool for a while. Whilst the mixture is still warm, strain using a sieve or a colander. Discard the vegetables. Pick the small pieces of meat from the bones and add to the liquid. When finished, dicard the bones.
  • Put the liquid back on the heat until it boils, add noodles or any pasta you have and simmer until the pasta is just under done.
  • Serve piping hot in a big bowl
